 Tip of the Day

Here are some vacation tips for you 'puter lovers.  Before you leave, even for a weekend, remember:

1) Pull the plug out of the wall on your computer.  Make sure the plug is facing away from the electrical socket.

2) If you subscribe to many e-mail lists on services such as http://www.onelist.com   remember that you can go to your
   member center and check off "no mail"  while you're away.

3) Check to see if your ISP has any vacation service benefits and ways to check your mail from other
   computers.

Commission to Recommend Ban on Internet Gambling

On June 18, the National Gambling Impact Study Commission will release the final report of its two-year study on gambling and will likely advise President Clinton and Congress to outlaw Internet gambling in the U.S. "Online wagering promises to revolutionize the way Americans gamble because it opens up the possibility of immediate, individual, 24-hour access to the full range of gambling in every home," the report concludes. The anonymity afforded by the Internet is inherently dangerous because it could give minors access to gaming sites, foster addiction among chronic gamblers, and permit crime to flourish.  The commission urges that people under the age of 21 be barred from participating in legal gambling and that gambling operations exclude advertising that is targeted at groups such as youths and the poor. In addition, the commission recommends that states and Indian tribal leaders push for gambling taxes that allocate funding to support research on the ill effects of gambling and prevention, education, and treatment programs.

Cornish Hens With Purple Grape Sauce

Cornish hens are adaptable to many new preparations. Stuffed with purple grapes, they have a delicate flavor and the sauce is an amazing shade of lavender.

2 - Cornish hens ( about 1 pound each )
3/4 - Cup ( 1 1/2 sticks ) unsalted butter, melted
2 to 2 1/2 - Cups seedless purple grapes, halved
1 - Teaspoon crushed cardamom seeds
1 - Tablespoon fresh lemon juice
Salt and freshly ground pepper to taste

Preheat oven to 450 degrees. Remove livers and gizzards from hens. Trim livers and set aside. (Discard gizzards). Arrange hens in baking pan just large enough to hold birds tightly side by side. Pour melted butter over top. Roast until skin begins to brown, about 10 minutes. Reduce oven temperature to 375 degrees, baste hens and continue roasting, basting every 5 to 10 minutes, until hens have cooked for 30 minutes.

Remove pan from oven and pack grapes into hens' cavities. Sprinkle remaining grapes (about 1 cup) over birds. Return pan to oven and roast, basting frequently, until hens are done, about 15 minutes longer.  Transfer hens to serving platter, cover and keep warm.

Puree livers in food processor for 1 minute. Add cardamom seeds. With machine running, pour hot pan juices and grapes through feed tube.  Mix a full 2 minutes. Strain sauce through sieve into bowl. Add lemon juice, salt and pepper. Serve hens immediately with sauce. Serves 2.

This elegant dish deserves a wine such as a fruity Petite Sirah or Zinfandel. Enjoy!
