"Cooking for the Empty Nest"
Recipe of the Week

Well it’s that time of year, and if you haven’t cleaned the
“Barbie” yet, here is a good reason to do it.

Apple Chicken Dijon
 
   1 cup apple cider
   4 shallots, diced
   2 tsp. dried tarragon
   1/4 cup Dijon mustard
   1/4 cup honey
   Salt and pepper to taste
   4 - 6 boneless chicken breasts
 
Place white wine, shallots and tarragon in a saucepan and reduce
until about half the liquid is gone. Stir in mustard, honey and
salt and pepper.

Cover chicken breasts with sauce and grill until fully cooked. Of
course, if the spirit is willing but the flesh is weak, and
you’re not up to cleaning the “Barbie,” you can also broil
this in your oven.
