Recipe of the Week

Spinach with Bacon
 
   1 10-oz. box of frozen spinach
   1/4 pound low fat bacon strips, diced
   1 onion, diced
   Sprinkle of garlic powder
   Sprinkle of seasoned salt
   1/8 cup of season bread crumbs
   1/4 cup of diced muenster cheese
   1 egg, beaten
 
Heat spinach until warmed and drain liquid. Cook bacon till
crispy, drain fat but leave the drippings in the pan. Cook onion
in pan. Add spinach and stir on low heat. Add garlic powder,
seasoned salt and bread crumbs. Stir well. Add muenster cheese
and stir. As cheese melts add egg and stir. The spinach mixture
should continue to cook for about 10 minutes. Crumble bacon, add
and stir. Cover and let sit on low heat for about 10 minutes.
Serve warm with crackers.

Now for our vegetarian friends – instead of the bacon, use
“Bacon Bacon” which is a soy based product.
