"Cooking for the Empty Nest"
Recipe of the Week
by Susan Kemp

Ginger Pork Tenderloin

2 pork tenderloins about 2 pounds each
   Salt and pepper to taste
   2/3 cup brown sugar
   1 tsp. dry mustard
   1/2 tsp. ground ginger
1 Tbsp. low sodium soy sauce
   1 Tbsp. apple cider vinegar

Rub tenderloins with salt and pepper. Combine brown sugar; dry
mustard, ginger, soy sauce and vinegar and mix well to create a
glaze for the tenderloins. Spread the glaze over the pork and
grill over medium heat until the pork is cooked through. The
glaze is wonderful on the pork tenderloins. You could also
marinate the pork for a few hours or overnight in the glaze for
some added flavor.
