Indian Rice – this is a great dish to complement most any meal
4 Tbsp. butter
1 tsp. curry powder
2 cups chicken broth
1 cup white or wild rice
1/2 cup celery chopped
1 small onion, chopped
1/3 cup raisins
1/3 cup mango chutney
Salt and pepper to taste
Melt 2 Tbsp. of the butter in a saucepan and add
curry powder,
and chicken broth; bring to a boil. Add rice
and reduce
temperature to low. Cover and cook until all
liquid is absorbed.
Saute celery and onion in the remaining 2 Tbsp.
of butter. Stir
into cooked rice. Toss in raisins and chutney
and add salt and
pepper. Stir and serve.
