Recipe of the Week

Broccoli and Cheese Soup
 
   1 head fresh broccoli, washed
   1 small onion
   2 cloves garlic
   1/3 cup flour
   2 cups half and half or light cream
   2 cups chicken broth
   1 tsp. Worcestershire sauce
   Salt and pepper to taste
   2 cups sharp cheddar cheese, grated
   1/4 cup green onions
 
Using your food processor, mince broccoli, onion and garlic,
then lightly sauté.  Combine flour and half and half or cream
and stir until smooth. Add chicken broth, Worcestershire
sauce and salt and pepper and simmer at low heat
until warm - add grated cheddar cheese - stir often
