Sometimes it is difficult to come up with a really
tasty salad.
The recipe today is just that.
Spinach Orange Salad
6 cups baby spinach, washed and patted dry
1 11-oz. can mandarin oranges, drained
1 small jicama, peeled and cut into thin strips
1/4 cup pecan or walnut halves
Lemon Vinaigrette
1/4 cup lemon juice
3 Tbsp. olive oil
1/4 cup light sour cream
2 tsp. sugar
1/4 tsp. red pepper flakes
Salt and pepper to taste
Combine in a salad cruet and shake.
Place all ingredients in a large serving bowl.
Just before
serving, pour vinaigrette over salad and toss.
