Baked Lemon Chicken

Chicken is always a great substitute for red meat in your diet,
and this is one of my favorites.

4 - 6 skinless chicken thighs or breasts
1 Tbsp. grated lemon peel
1/3 cup fresh lemon juice
2 Tbsp. garlic salt
2 tsp. seasoned pepper

Put lemon peel and juice in a resealable plastic bag. Place
chicken in the bag and shake to coat. Let sit for about ten
minutes and shake again.

Remove chicken and place in a baking dish.  Combine garlic salt
and seasoned pepper and sprinkle over chicken. Bake at 350
degrees for about 45 - 60 minutes or until juices run clear.
