Marinated Pork Roast

Pork is one of the leanest meats you can get and the loin roast
is a very lean cut.

1/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup dry white wine
3 tsp. chopped fresh rosemary or 2 tsp. dried rosemary
1/2 tsp. salt
1 tsp. fresh ground pepper
2 cloves minced fresh garlic
1 two pound boneless pork loin roast

Combine first 7 ingredients and marinate pork loin roast in
marinade for at least three to four hours. I prefer overnight in
the refrigerator.

Place roast in baking dish and sprinkle with marinade.

Roast at 450 degrees for 15 minutes. Allow to rest in warm place
for 20 minutes. Slice roast and serve immediately. If you live in
a climate that is still warm enough for outdoor cooking, this
really comes out great when done on a grill.
