Spinach Salad Supreme
Here's a salad that can be a meal all by itself.
6 cups baby spinach, washed and patted dry
1 clove garlic
2/3 cup freshly grated Parmesan cheese
1 tsp. Dijon mustard
2 Tbsp. red wine vinegar
1/4 cup olive oil
1/2 tsp. fresh ground pepper
Salt and pepper to taste
Croutons
Rub the garlic clove along the inside of a wooden
bowl and
discard clove. Place spinach in bowl and sprinkle
with cheese.
Mix together mustard, vinegar, oil and salt and
pepper in a salad
cruet and shake well.
Pour over spinach just before serving and toss.
Sprinkle with
croutons and serve. As a variation, add your
favorite meat diced
into cubes.
