Garlic Split Pea Dip

1 cup dried split peas

2 cups water
1 Tbsp. dried oregano
1 tsp. crushed bay leaves
Pinch of salt
2 Tbsp. red wine vinegar
2 Tbsp. olive oil
2 cloves garlic, minced
1/4 cup black olives, pitted
Fresh ground pepper
Fresh cilantro chopped

Wash peas and place in a saucepan with water, oregano, bay leaves and salt. Bring water to a boil and simmer for 35 - 45 minutes or until peas are tender. Remove bay leaves and discard. Drain peas and transfer peas to a blender or food processor along with red wine vinegar, olive oil, garlic, and olives. Blend until smooth. Place in a bowl and sprinkle with pepper and garnish with cilantro. Chill until ready to serve. Serve with raw vegetables and/or crackers.
