"Cooking for the Empty Nest"

Seven Layer Salad

This is a layered salad that is so quick to prepare, yet everyone
loves it!  By reading the recipe, it sounds a bit different
...but tastes wonderful.

Ingredients:
3 cups of shredded lettuce
2 cups of frozen peas, thawed
11 hard boiled eggs, peeled and cooled
2 jars of bacon bits (real)
1 cup of chives
3 cups of shredded cheddar cheese
1 cup of sour cream
1 cup of Mayo

Directions:
Boil eggs, remove shells, and cut into small pieces, allow
chilling. Mix the sour cream and mayonnaise together and set
aside. Place shredded lettuce at bottom of rectangular baking pan
in one layer. Next spread the peas evenly on top of the lettuce.
Spread the chilled boiled eggs over the peas evenly.  Spread the
chopped chives over the eggs evenly. Next layer on the bacon
bits. Finally take the sour cream and mayonnaise mixture and
spread over the top of the bacon bits.

This is a great dish that you can prepare in advance if you're
having company over.
