Pasta Salad
Now that the warmer weather is upon us, it is
time to think of
not only a healthy meal, but one that is easy
to make.
Pasta is a complex carbohydrate that helps give
you energy. A
single 1/2 cup serving of pasta provides 99 calories,
less than
half a gram of fat, less than 5 milligrams of
sodium and is
fortified with folic acid - an important B vitamin.
Ingredients:
5 Strips of bacon, cooked and crumbled
1/2 Box of elbow or shell pasta
3 Hard boiled eggs, shelled and chopped
8 Ounces of frozen shoepeg corn and petite peas*
- see note below
1/2 Red Onion - chopped
2 Teaspoons celery seed
Mayonnaise
Salt and Pepper to taste
Boil pasta according to package directions. Do
NOT defrost corn
and peas. Place corn and peas in strainer. When
pasta is done
drain over the corn and peas. Do NOT rinse with
cold water. In a
large bowl mix in all remaining ingredients and
chill for several
hours before serving.
The brand name of "Hanover" puts out a mix of
shoepeg corn and
petite peas. If not available in your local supermarket,
use
small white frozen corn.
For a one dish complete meal try adding some diced
leftover
grilled chicken or ham. A nice crisp tossed salad
with tomatoes
will top off the meal. Serves 2 to 4. Enjoy!
