Creamy Scalloped Potatoes with Ham
This recipe is rich, creamy and very savory! This
is very easy to
make and is truly a great side dish!
Ingredients:
8 cups Potatoes, sliced to a 1/4" thickness
1 cup Onion, chopped
1 tsp. Garlic, minced if you want
4 tbsps. Butter or Margarine
2 cups Sour Cream
4 tbsps. Milk
4 Eggs, well beaten
2 tsps. Flour
2 tsps. Salt
2 dashes of Black Pepper
2 cups Cheddar and Colby Jack Cheese Mix, shredded
1 cup Parmesan Cheese, freshly grated
2 cups Honey Baked Ham, diced small, about 1/4-inch
thickness
Directions:
Preheat oven to 350 degrees F. In boiling
water, cook sliced
potatoes, about 15 minutes and drain well.
In a small saucepan, placed on a stove, set on
medium-high heat,
place butter and sauté onions and garlic
until translucent, set
aside and cool.
In a large bowl combine onions, garlic, sour cream,
potatoes,
milk, flour, eggs, salt, pepper, ham and cheddar/jack
cheese, mix
well.
Place potato mixture into a well-buttered 2qrt
casserole dish.
Top with Parmesan cheese and place into a 350-degree
oven and
bake for 20 to 30 minutes, or until golden brown
on top and
creamy in the middle.
Serve hot! Goes great with chicken, beef and pork dishes.
